Claims

The present invention pertains to the field of dairy technology. It relates to improved phage-resistant strains of the species Streptococcus thermophilus, fermented compositions and products comprising the strains, and methods for producing said fermented products.

1. A phage-resistant lactic acid bacteria strain derived from a parent strain of the species Streptococcus thermophilus, wherein the strain (a) is resistant to one or more phages to which the parent strain is sensitive, selected from DSM 35003 CHPC869, DSM 35011 CHPC1230 and DSM 35012 CHPC1636, and (b) provides faster acidification of a milk base in the presence of said one or more phages compared to the parent strain.

7. A composition comprising the strain according to any of claims 1 to 6.

13. A method for producing a fermented product comprising the steps: (a) adding the strain according to any of claims 1 to 6 or the composition according to any of claims 7 to 12 to a dairy base; and (b) fermenting the dairy base at a temperature between approximately 22°C and approximately 45°C until a pH of 4.6 or less is achieved.

16. A fermented product comprising the strain according to any one of claims 1 to 6, the composition according to any one of claims 7 to 12, or obtained by the method according to any one of claims 13 to 15.

20. A food product or feed comprising the strain according to any of claims 1 to 6, the composition according to any of claims 7 to 12, or obtained by the method according to any of claims 13 to 15.
