Abstract

Automatic assistance system for operational deviations in the filleting, trimming, and degreasing process (1) intended for the visual and geometric control of fillets moving along a process line after the filleting, trimming, and degreasing of value-added fishery and aquaculture products CHARACTERIZED in that it comprises an integrated flow intended to identify specific anatomical regions of the fillet; detect operational deviations generated during the filleting, trimming, and degreasing process; classify said deviations by means of a hierarchy of associated configurable rules or a product standard; determine operational conformity with respect to said standard; and generate in real time corrective actions directed to the operators or automated process system, comprising at least one overhead optical image acquisition module (2); at least one user assistance screen (4);and an integrated image processing and control component (3).;
