Abstract

The invention provides a method for preparing soluble dietary fibers from high-humidity extruded rice bran slag. In the method, the soluble dietary fiber product of the rice bran can be obtained by carrying out high-humidity extrusion on the rice bran slag, hydrolyzing the high-humidity extruded rice bran slag by using cellulase and treating the rice bran slag by using neutral protease or absolute ethyl alcohol. At present, a plurality of methods, which mainly include an acid process, an alkaline process, an enzymatic process, a fermentation process, a mechanical process, a combining process and the like, are available for preparing the soluble dietary fibers from the rice bran; and the raw materials of the methods are all rice bran slag which are not extruded under high humidity, whereincompared with other processes, the enzymatic process has the advantage of slightly high yield of the soluble dietary fibers; however, the yield is low with respect to the proportion in terms of the total content of the soluble dietary fibers.
