The invention discloses a crude oil emulsion stability evaluating instrument which comprises an emulsion preparing device, an emulsion standing thermostat and an observing device, wherein the emulsion preparing device is provided with an emulsifying chamber; a liquid inlet is arranged at one end of the emulsifying chamber; a liquid outlet is arranged at the other end of the emulsifying chamber; the emulsifying chamber is internally provided with a porous medium plate which can move axially; the emulsion standing thermostat is provided with an inner layer tank body and an outer layer tank body; the outer layer tank body is sleeved outside the inner layer tank body; a test-tube rack is arranged inside the inner layer tank body; a plurality of test tubes are placed on the test-tube rack; the plurality of test tubes are respectively used for receiving emulsion liquid prepared from the liquid outlet of the emulsifying chamber; transparent observing windows are arranged on the inner layer tank body and the outer layer tank body which are correspondingly provided with test-tube rack; the observing device is provided with a camera mechanism and a walking control mechanism; wherein the walking control mechanism is connected with the camera mechanism; and the camera mechanism faces to the transparent observing window horizontally.
