Abstract

The invention provides a process for extracting components of bitter melon. The process includes: a) preparing raw juice; b) filtering the raw juice to obtain filtered melon juice; c) adjusting the pH value of the melon juice; d) stabilizing the pH value of the filtered melon juice; ) neutralizing the melon juice with a stable pH value; f) standing still to neutralize the melon juice for 20-30 minutes; g) re-testing the pH value; h) finally dehydrating the melon juice to obtain herbal essence. The process is simple, low in cost, does not use any harmful organic solvent, and enhances tissue efficacy. The present invention also provides a simple and effective anti-diabetic formulation comprising active ingredients of bitter melon.
