Abstract

The present invention relates to a method for manufacturing peach gochujang containing peach concentrate, and specifically, to a method for manufacturing gochujang using the glucose and fructose of the peach itself without using water and sugar. By utilizing the method for manufacturing peach gochujang according to the present invention, the taste, aroma, flavor, and nutritional components of peaches can be applied to gochujang without concerns about spoilage or deterioration of the peaches. Therefore, by utilizing the natural components of the peach itself, it is possible to provide gochujang that is low in salt and simultaneously enhanced with immune components.
