Abstract
This invention relates to food industry equipment, specifically to devices for producing dairy and fermented milk products, and can be used in the production of kumiss, shubat, ayran, butter, liquid medications, and food additives. The objective of this invention is to increase the intensity of mixing, whipping, and shaking processes and enhance the device's performance. The technical result is achieved in that the device for the production of dairy and fermented milk products contains a container, pipes for supplying raw materials and removing the finished product, a working element made in the form of a disk with holes, a drive for moving the working element, additionally contains communicating tubes, and is also equipped with a damping device, wherein the number and diameter of the holes of the working element and the communicating tubes vary depending on the technological process. The device operates as follows. Primary product is fed through a tube (7) into a liquid container (6). After this, the electric motor (1) is activated, which, via a crank (2) and connecting rod (3), sets the slider (4) and the working element (5) in reciprocating motion. In this case, depending on the direction of movement of the working element (5), some part of the product flows through the longitudinal openings of the working element (5) and the communicating tube (8) from one part of the liquid container (6) to another relative to the working element (5). The intensity of the technological processes of mixing, whipping and shaking is regulated by varying the number and radius of the openings of the working element (5) and communicating tubes (8), the length of the crank (2), the selection of an electric motor (1) with optimal power, changing the throughput of the communicating tube (8) and its quantity. The damping device (10) dampens unwanted vibrations in the product container that arise as a result of the reciprocating movement of the working element and the movement of the working fluid.
