Abstract
The invention relates to biotechnology, in particular to a process for cultivating theSaccharomyces cerevisiaeyeast strain and can be applied for producing exopolysaccharides with antifungal activity.The process for cultivating the Saccharomyces cerevisiae CNMN-Y-55 yeast strain, according to the invention, provides for the submerged cultivation of the strain at a temperature of 27-28°C with continuous stirring at 200 rpm for 120 hours, on nutrient media obtained from agro-food vegetable waste, containing carrot peel extract or red beet peel extract.
