Abstract
The present invention relates to an automated machine for the production of picarones (Peruvian doughnuts) using an integrated system for dough dosing, controlled frying, automatic unloading, and a control panel. The control and monitoring system (1) allows for the configuration and supervision of operating parameters, including temperature, start, stop, and emergency functions. The machine incorporates an oil storage and dosing system (2), consisting of a tank, level sensors, pipes, and solenoid valves that regulate the supply and drainage of oil to an industrial tank (2.6). Additionally, an oil temperature and quality control system (3), comprised of sensors and a heating element, maintains optimal frying conditions.The dough storage and dosing system (4) comprises a hopper, motors, gearmotors, and transmission mechanisms that enable the movement, stretching, cutting, and uniform dosing of the dough into the frying tank. Its structure incorporates support and fixing elements that ensure stability and precision during operation. The machine also features a picarones tipping system (5) driven by a gearmotor, chain, sprockets, and tilting paddles, allowing for homogeneous frying. Subsequently, a conveying system (6) transports the picarones via guided bars driven by a mechanical transmission assembly consisting of shafts, chains, sprockets, and rollers. Finally, the picarones are conveyed to an output and receiving system (7), where they are safely and efficiently unloaded, completing an automated process that optimizes production, uniformity, and the quality of the final product.
