Abstract
A process of producing smoked deboned flying fish (Exocoetidae) treated with coconut water (cocos nucifera) and enhanced with garlic (Allium sativum) oil comprises the following steps. Clean the flying fish. Debone the cleaned flying fish. Cut the flying fish lengthwise. Soak the flying fish in young coconut water. Smoke the soaked flying fish using coconut husks until light brown color is achieved. Soak the smoked deboned flying fish with warm garlic oil in suitable container. Add sesame oil and annatto seeds. Reduce excess oil from the container and vacuum sealing the smoked deboned flying fish.
