COMPOSITION OF KAMIAS (Averrhoa Bilimbi) INSTANT SEASONING MIX – SHRIMP FLAVORED

Abstract

A kamias (Averrhoa bilimbi) instant seasoning mix – shrimp flavored has been developed to enhance taste. It comprises three main ingredients—kamias (Averrhoa bilimbi), sweet potato, and shrimp—rich in essential nutrients, including Vitamins A, B, C, and E; protein and minerals; antioxidant, antiviral, and antibacterial properties that support immune health. It is versatile, and suitable for sinigang, paksiw, and vegetable dishes, imparting a balanced sour and shrimp flavor. It consists of 100 g of powdered kamias (Averrhoa bilimbi), 0.5 cups of powdered sweet potato, 0.5 cups of powdered shrimp, 1 tsp of black pepper, 1 tbsp of salt, and 1 / 8 tsp of monosodium glutamate. Sensory evaluation revealed a high acceptability level, with positive feedback on its fine texture, distinguishable aroma, and agreeable flavor. A 20 g pack is economical, serving one to two uses depending on food quantity. This innovation offers a flavorful, nutrient-rich alternative for enhancing traditional local cuisine.
