Abstract
The present utility model relates to a bottled chickpeas with preserved texture and color by the application of agitation during sterilization. The preservation of texture and color of the chickpeas is a result of a thermal processing under water immersion and end-over-end agitation modes with water pre-heated at 60°C and retort temperature set at 121°C.
