Abstract

The present utility model relates to the field of food processing and more particularly to a process of producing meyer lemon slices comprising the steps of: slicing fresh raw meyer lemons into thick cross section slices and removing the seeds; steaming the sliced meyer lemons; preparing a pre-treatment solution using sodium metabisulfite in 3 liters water and soaking the steamed lemons; and dehydrating the pre-treated and steamed meyer lemons inside a cabinet dehydrator until the slices are dried. This technique produces slices with reduced nutrient loss, enhanced flavor, improved texture, and lower energy consumption during dehydration and pulverization. The use of sodium metabisulfite preserves the natural characteristics of the lemon, while debittering improves color and flavor. The innovation ensures the commercial availability of meyer lemon slices as a natural powdered product with enhanced qualities. It provides consumers with a safe, highquality option and supports local production.
