Fuel-convertible bread and pastry oven

Abstract

A fuel-convertible bread and pastry oven comprising a cooking chamber assembly, a heating assembly disposed below the cooking chamber assembly, and a structural support assembly supporting the cooking chamber assembly and the heating assembly. The cooking chamber assembly includes an oven chamber having a door hingedly mounted along a lower edge thereof and a plurality of cooking supports arranged at spaced vertical intervals. The heating assembly includes a combustion compartment having an open front portion and a removable perforated burner bowl configured to receive solid fuel. The combustion compartment is accessible through the open front portion without movement of the oven chamber and is configured to selectively receive either the removable perforated burner bowl for operation using solid fuel or a gas burner connectable to an external gas source for operation using gas fuel. The structural support assembly includes a main frame having an upper support portion supporting the oven chamber and a lower support portion supporting the combustion compartment.
