Abstract
The present utility model relates generally to the field of food processing and beverage manufacturing, specifically to processes for producing a carbonated beverage incorporating coconut (Cocos nucifera L.) embryo as a functional ingredient to deliver antioxidants, immune support through anti-viral and nutrientrich properties, energy enhancement, digestive benefits, and blood sugar regulation. This utility model addresses these limitations by incorporating coconut (Cocos nucifera L.) embryo puree, coconut (Cocos nucifera L.) water, coconut (Cocos nucifera L.) milk, sugar, citric acid, preservatives, gum arabic stabilizer, and carbon dioxide gas. The process involves embryo pureeing, base preparation, stabilizer solution formation, homogenization, filtration through micron sieve, chilling, CO2 injection, and aseptic bottling, yielding a carbonated beverage with coconut (Cocos nucifera L.) embryo.
