Extruded snack food with breadfruit flour

Abstract

An extruded snack food with breadfruit flour, comprising 80-95% w / w rice flour, 5­ 20% w / w breadfruit flour, and 0.01-0.05% w / w citric acid is disclosed. The snack food is produced by twin-screw extrusion processing. The extruded snack food may come in various shapes and may further comprise a flavoring in an amount not exceeding 10% by weight of the product and a fat component in an amount not exceeding 10% by weight of the product. The extruded snack food with breadfruit flour is a ready-to-eat product with desirable sensory properties and nutritional composition, as well as low acrylamide content.
