Vegetable seasoning powder mix composition

Abstract

A salt-free vegetable seasoning powder mix composition consisting of 25% w / w dried ground carrot peels, 25% w / w dried ground potato peels, 25% w / w dried ground squash peels, and 25% w / w dried ground onion peels is disclosed. The vegetable peels are washed, dehydrated at 52–57°C (125–135°F), and ground into a fine powder, which is contained in a sealed packaging in a 50-gram format. The composition contains no added salt, preservatives, artificial coloring, or flavoring, and provides a shelf-stable seasoning that enhances the flavor and nutritional profile of foods and beverages while utilizing vegetable peels otherwise discarded as waste.
