A process for producing malunggay (Moringa oleifera) stem cookie ice cream is disclosed. The process comprises cleaning, soaking, and patting dry moringa stems, slicing the stems thinly, dehydrating the sliced stems, and pulverizing the dehydrated stems to obtain a moringa stem powder; creaming butter and brown sugar and gradually incorporating sifted dry ingredients, including a portion of the moringa stem powder, to form a dough that is portioned and baked into moringa stem cookies, which are cooled and crumbled; whipping chilled all-purpose cream and gradually adding condensed milk to form a sweetened cream base; adding moringa stem powder and salt to the cream base and mixing until the color is even throughout; folding the crumbled cookies into the mixture; and transferring the mixture into a food-safe container, sealing, and freezing until set.
