A process for the preparation of date powder from yellow dates (Khalal Stage)

Abstract

A process for the preparation of Date Powder from yellow dates (khalal stage) has been developed. In this process yellow dates were boiled with water at 90- 95°C for 45-50 minutes in a steam-jacketed reactor, then partially dehydrated at 55-60°C for 16-18 hrs. After deseeding, the partially dehydrated and chopped date, pulp was completely dehydrated at the same temperature for 12 hrs in a force circulating hot air cabinet dryer. Resultant, brown colored solid mass with moisture content of 2.5% was obtained which was finely ground to powder form having nutritional value of 311 kcal per 100g of date powder in appropriate food grade packaging with a shelf life of one year.
