------24 / 09 / 2567------(OCR)OCR10KL1. The process for producing protein hydrolysate from chicken waste involves the following steps: a) Grind the chicken waste to reduce its size using the following scraps: 30-40% by weight of chicken carcass scraps, 25-35% by weight of chicken breast scraps, 20-30% by weight of chicken tenderloin scraps, and 5-15% by weight of chicken thigh scraps. b) Mix the ground chicken waste with water in a ratio of chicken waste to water of 1:1-1:2 (by weight). c) Add selective protease enzymes to the mixture obtained from step b). It is obtained by using protein-specific enzymes such as subtilisin, trypsin, neutral protease, or papain at a concentration of 0.05-1.0% of the total weight of the mixture. The mixture is then heated at 40-60°C for 30-120 minutes, and the enzymatic reaction is stopped by heating at 85-95°C for 30-60 minutes, resulting in a protein hydrolyzed solution. (d) The resulting protein hydrolyzed solution is filtered to obtain a clear, solid solution with less than 0% fat.1) Concentrate the protein hydrolysate solution obtained in step 2) by evaporating water from the solution using a vacuum system at a temperature of 50-60 degrees Celsius to obtain a clear protein hydrolysate solution with a total dissolved solids content increased to 10-40%.
