Development of a food supplement based on Kumquat fruit

Abstract

The present invention relates to a food and nutraceutical product based on a crude aqueous extract of kumquat fruit, which can be used to prevent and treat gastrointestinal diseases and associated metabolic problems. This kumquat fruit-based dietary supplement is rich in biological compounds such as polyphenols, flavonoids, tannins, fiber, protein, carbohydrates, and lipids. These compounds offer excellent effects on human health and increase the nutritional value of the supplement described in the invention. The invention further relates to a food supplement based on a crude aqueous extract of kumquat fruit. The preparation of this supplement consists of following a well-explained process and a series of successive and ordered steps to obtain the powder used in the protocol of the invention (Sorting, rinsing, drying, grinding, mixing, maceration, filtration and freeze-drying). The invention also relates to a food supplement based on a crude aqueous extract of kumquat fruit which may be presented in various forms: tablets, capsules, syrup, gel, biscuits, jams, yogurts, granules, breads and cakes.
