Imitation sucrose flavored liquid sugar and its preparation method

Abstract

A sucrose-flavored liquid sugar comprises steviol glycosides, erythritol, sucralose, a thickener, an acid-base regulator, a flavoring agent, and water. A method for preparing the sucrose-flavored liquid sugar includes formulating steviol glycosides, erythritol, and sucralose into a sugar substitute component; dissolving the thickener and acid-base regulator in water to prepare a thickening component; dissolving the flavoring agent and acid-base regulator in water to prepare a flavoring component; and then mixing the sugar substitute component, thickener component, and flavoring component with water to obtain the sucrose-flavored liquid sugar. The flavoring agent comprises 5 wt% to 6 wt% propylene glycol, 37 wt% to 38 wt% water, and 39 wt% to 40 wt% edible alcohol. The sucrose-flavored liquid sugar of this invention has a flavor similar to that of sucrose liquor with a sugar content between 0.5°Brix and 75°Brix.
