Abstract

The useful solution refers to a process for producing instant rice from rice (Oryza sativa) with increased resistant starch, including the following steps: (i) producing resistant starch-containing rice from rice (Oryza sativa) raw material, (ii) heat treating the resistant starch-containing rice obtained in step (i) to obtain instant rice in reconstituted or sterilized form containing 9%-18% resistant starch by weight.
