Claims

The present invention relates to the agri-food sector and consists of a novel composition of dairy fat, said composition having novel and beneficial properties. The present invention also relates to the process for obtaining the composition of the invention and to its applications in the agri-food, cosmetic, and pharmaceutical fields.

1. Composition of a milk fat, characterized by comprising triglycerides, between 30% and 70% (m / m) in mono- and diglycerides of fatty acids, between 20% and 60% (m / m) in diglycerides, between 5% and 15% (m / m) in monoglycerides and less than 45% (m / m) in free fatty acids calculated in relation to the value of 100% (m / m) of the composition and contains at least 10% (m / m) of diglycerides whose sum of carbons of the fatty acid chains is less than or equal to 30.

16. A cosmetic composition comprising a suitable cosmetic vehicle, carrier or adjuvant and the composition according to any of the preceding claims 1 to 6.

17. A pharmaceutical composition comprising a suitable pharmaceutical vehicle, carrier or adjuvant and the composition according to any of claims 1 to 6 above.

18. A method for obtaining a dairy composition, preferably the composition according to any of claims 1 to 6, comprising enzymatic hydrolysis of an animal fat, preferably milk fat, by a lipase dissolved in water and having a lipase content of between 0.1% and 3% by weight of the fat, followed by centrifugation and vacuum evaporation to remove the aqueous phase from the composition and obtain a maximum residual water content of 0.5% by weight, followed by one or more steps of a method for reducing the % of free fatty acids in the composition.
