Abstract

The present invention relates to a method of soaking and germinating malt grain, preferably barley, comprising: soaking the grain in water; and germinating the grain to produce germinated grain; where the soaking and germination are carried out in green light and / or in the dark. This method shortens the time required for germination without affecting the quality of the resulting malted product, e.g. barley, or the subsequent malt.
