Abstract
Description
/ 7 VERTICAL SMOKER WITH REVERSE SMOKE FLOW SYSTEM Field of invention
[001] The present invention relates to a vertical smoker for roasting and / or cooking food outdoors, more particularly a smoker with a geometry that allows reverse smoke flow and whose heat source can be electric, charcoal or gas. Fundamentals of the invention
[002] The vertical smoker with reverse smoke flow system constitutes several functional improvements when compared to other smokers found in the state of the art. Traditional smokers use the normal flow of smoke to cook, roast or smoke food, while the present invention features a reverse smoke flow, i.e., the smoke enters through the top of the smoking chamber and follows a downward flow.
[003] Due to this reverse flow, a smoke recirculation system is created inside the smoking chamber, allowing food to be baked or smoked in a much more homogeneous way compared to traditional smokers.
[004] Document AU2015255207 shows a vertical smoker, with a smoking chamber and a heating chamber (firebox), holes for smoke passage between the chambers, and a fan to improve convection inside the smoking chamber. The invention disclosed by this document is similar only in that it is vertical and has two distinct chambers. The reverse airflow of the present invention is not forced. Furthermore, the present invention does not have perforations in the walls, i.e., the smoke does not escape through the sides, and the air intake is improved to control combustion and internal temperature. Petition 870220008408, dated 01 / 31 / 2022, p. 8 / 22 / 7
[005] Document US4130052 discloses a smoker, also vertical and with reverse smoke flow, with two compartments, a heating chamber and a smoking chamber, electrically powered to generate smoke from wood. The geometry of construction and operation of the material in this American document is very close to that of the present patent. The difference is that the invention described in this patent can be used burning gas or charcoal and the side air inlets, which were strategically designed to control the temperature inside the smoker.
[006] Temperature control in US4130052 is done by a thermostat at the top, and the reverse airflow helps to reduce the smoke temperature and increase the pressure inside the chamber, so that the food does not dry out and the smoky flavor is more pronounced. In comparison, the invention in this document allows temperature control by means of a thermometer installed on the door of the smoking chamber and by the side air inlets, allowing the food to cook at a specific temperature and to the taste of the person preparing it.
[007] Document US2013019760 also describes a vertical smoker with reverse smoke flow. However, the reverse flow method is different, and the simplicity of its geometry contrasts with the elaborate geometry of the material described in this patent. It is immediately apparent that the American document has two sections: the smoking section, with an opening at the front of the smoker, and the heating section, at the back. Furthermore, the smoker lacks the side air inlets for temperature control.
[008] Document US2016100594 describes a vertical smoker and grill, which can be used in the same embodiment as the invention presented in this document. The smoke flow can be reversed or distributed to the sides, through holes in the plates that make up the side wall and has rails to support up to four grills, thermometers for monitoring the internal temperature and only one side air inlet regulated by a valve.
[009] Comparing document US2016100594 with the invention described in this patent, it is clear that both are very similar. However, technical and functional improvements have been made and can be cited. Petition 870220008408, dated 01 / 31 / 2022, p. 9 / 22 / 7
[0010] Firstly, the enlarged air intake located on both sides instead of just one, with rail adjustment, allows for better control of the amount of air entering the heating chamber. Since these intakes are located on both sides, air circulation improves within the chamber, optimizing the combustion of gas or coal and the distribution of smoke before it rises to be dispersed. Another point to mention is the installation of a chimney to control the amount of smoke instead of an opening for placing pots.
[0011] Document US2011268853 also belongs to the state of the art of this invention, with multiple drawers, but with greater simplicity than the smoker described by this patent. Another document, US10729148, is also interesting to mention as it is a vertical smoker, but without reverse flow.
[0012] After extensive research into the state of the art of vertical smokers, it was found that, although some documents are similar to the subject matter presented in this document, the technical and functional improvements resulting from changes in the shapes and arrangements of the vertical smoker with a reverse smoke flow system deserve the privilege of protection. Brief description of the drawings Figure 1 shows an isometric view of the smoker. Figure 2 illustrates the isometric view of the smoker with the grill. Figure 3 shows a front view of the smoker. Figure 4 shows an isometric view of the smoking chamber. Figure 5 illustrates in detail the upper part of the side of the smoker. Figure 6 shows the details of the air inlets of the smoker's firebox. Figure 7 shows a photo of the inside of the assembled smoker. Figure 8 shows a photo of the smoker with the door closed. Petition 870220008408, dated 01 / 31 / 2022, p. 10 / 22 / 7 Description of the invention
[0013] In embodiment of the invention, Figure 1 shows the vertical smoker, its rectangular shape, the division of the two compartments and its main parts: base of the heating chamber (HC) or firebox (1) preferred (charcoal, gas or electric resistance), support for the deflector plate (2), door of the heating chamber (3), metal plate (4), door of the smoking chamber (5), supports for grates (6), roof (7), handle (8), side wall (9), air inlet (10) and chimney (11).
[0014] In Figure 2, the smoker is shown with the side wall (9) invisible and the grate (18). Thus, it is possible to visualize the metal plates (4) that line the interior of the smoker and create the openings (19) for the smoke to escape and the internal lining (17) of the firebox doors (3) and the smoking chamber (5).
[0015] In Figure 3, the front view shows the doors (3) and (5), handles (8), air intake control systems (10), feet (13), chimney (11) and the fitting for precision thermometer (12) with a scale from 0°C to 350°C.
[0016] Figure 4 shows the smoking chamber (CD) in more detail. It is possible to visualize the folds of the metal sheet (4) that form the gap (19) through which the smoke rises from the grill compartment to the smoking chamber (CD) and the rear lining (24) of the chamber (CD). The folds (21) and (22) have 90° angles and holes that allow the gap (19) to be formed and fixed to the side wall (4). In addition, cutouts (20) were made in the sheet (4) to install a rod for hanging hooks, allowing smoking in a vertical position.
[0017] The metal sheet (24) is bent in the same way as the metal sheets (4). Thus, the entire smoking chamber (CD) is enveloped by smoke, allowing it to spread homogeneously throughout the chamber, giving more flavor to the food.
[0018] In order for the smoke to have a reverse flow, the lining plate of the rear wall of the combustion chamber (24) is made with the same folds (21) and (22) as the other plates (4), thus creating another gap (19) between the lining (24) and the rear wall (25) for the smoke to flow out, which is open only in the part Petition 870220008408, dated 01 / 31 / 2022, page 11 / 22 / 7 lower part of the plate, close to the deflector plate (23) and connected to the chimney (11). In this way, the smoke enters the smoking chamber through the upper side openings and exits through the lower rear opening in the smoking chamber (CD), causing the reverse smoke flow to occur.
[0019] Figure 5 shows in detail the gap (19), the folds (21) and (22) of the sheet (4) and the cutout (20) to fit the rods for hanging the hooks with food for vertical smoking. The side sheets (4) that line the smoking chamber (CD) and the sheet (24) are folded in the same way to allow fitting into the external walls (9) and (25).
[0020] Figure 6 shows the air inlet (10) more prominently. The holes that allow air inlet (14), which are double on both sides of the invention and have covers (16) with a rail (15), which allow controlling the temperature inside the oven.
[0021] Figure 7 shows the deflector plate (23) fitted into its support (2) and the smoker assembled for use. The deflector plate (23) is preferably a gastronorm container.
[0022] High-temperature resistant sealing rubbers are used to prevent smoke from escaping through the smoker doors (3) and (5). The chimney (11) also has a lid (24) that allows control of the amount of smoke inside the smoking chamber (CD). Pressure latches, springs or clips help to keep the doors (3) and (5) firmly closed. Examples of embodiments of the invention
[0023] To use the vertical smoker with reverse smoke flow system, first you must choose which heating source to use: charcoal, gas or electric, which is located at the base of the heating chamber (CA) or firebox (1). Grid (18) for placing the wood to be smoked or charcoal is located on the base (1). The firebox door (3) must be closed and kept closed during the process, being opened only for adding charcoal, wood for smoking or in other modes of use, which will be described below. Petition 870220008408, dated 01 / 31 / 2022, p. 12 / 22 / 7
[0024] The smoke generated is directed by the deflector plate (23) to the gaps (19) between the metal plate (4) and the wall (9) in the smoker, located on both sides of the invention. The plate (4) is folded twice at 90° and drilled to allow fitting into the side wall (9) using rivets and to create the gap for the smoke to flow to the smoking chamber (CD). Preferably, the internal metal plates are made of stainless steel and the external walls of carbon steel. However, other types of material may be used.
[0025] Smoke enters the smoking chamber (CD) from the upper side on both sides, enveloping the food from top to bottom, which is arranged on the grills or hung by hooks. The smoke exits through the lower part of the metal cladding sheet (24), whose folds create a gap (19) whose opening is at the bottom (instead of at the top, like the side gaps) through which the smoke exits the smoking chamber (CD) and flows to the chimney (11). In this way, the system creates a reverse smoke flow inside the smoker.
[0026] Air enters the heating chamber (HC) through the two side inlets (10). The orifices have been enlarged to allow greater airflow into the chamber (HC) of the smoker. A door attached to a sliding rail (15) regulates the amount of air entering this chamber, in order to control combustion and smoke temperature inside the smoker. Similarly, the chimney (11) also has a lid to control the smoke outlet from the smoking chamber.
[0027] On the doors of the smoking chamber (5) and the heating chamber (3), there are high-temperature sealing rubbers to prevent smoke from escaping through any opening in the doors, which are constructed with two coatings (17) for better thermal insulation. On the door of the smoking chamber (5), a precision thermometer, with a scale from 0°C to 350°C, is installed so that the temperature inside the smoker can be monitored. The doors also have handles to facilitate opening and closing.
[0028] Preferably, there are supports (6) for three grids and cutouts (20) to fit two hooks with food. However, the number of grids and rods inside the smoker may vary, containing more or fewer supports for grids and rods. Petition 870220008408, dated 01 / 31 / 2022, p. 13 / 22 / 7
[0029] Preferably, the internal lining of the smoker is made of stainless steel and the external walls of carbon steel. However, other types of materials may be used for the construction of the smoker.
[0030] The vertical smoker for barbecue with reverse smoke flow is primarily used for smoking food both horizontally, using grills, and vertically, using hooks with food attached to rods installed in the ceiling (7). However, this invention can also be used as an oven, when the deflector plate (23) is removed from its interior and it is used with the door closed.
[0031] Another form that the smoker can take on is that of a barbecue grill. For this, the deflector plate (23) must be removed and the invention used with the door open and with charcoal as a heat source. Petition 870220008408, dated 01 / 31 / 2022, page 14 / 22
