An edible seasoning and a method of making the same

Abstract

The application provides an edible seasoning and a preparation method thereof. The preparation method comprises the following steps: firstly, mixing a beta-cyclodextrin aqueous solution and Sichuan pepper leaves to prepare a Sichuan pepper leaf extract, taking the Sichuan pepper leaves as raw materials, and using the stable beta-cyclodextrin aqueous solution as the extract to extract all the active ingredients and flavoring substances in the Sichuan pepper leaves, so that the Sichuan pepper leaves are used to the maximum extent; obtaining Sichuan pepper seed oil; mixing the Sichuan pepper leaf extract and the Sichuan pepper seed oil according to a set oil-water ratio, so that the preparation becomes a typical pickering emulsion of oil-in-water stabilized by beta-cyclodextrin; after adding ingredients, the flavors of the Sichuan pepper seeds and the Sichuan pepper leaves are blended; and after uniform mixing, the edible seasoning is obtained. The seasoning not only has a unique flavor and is rich in active ingredients of the Sichuan pepper seeds and the Sichuan pepper leaves, but also is stable in property due to the special preparation method, and does not separate into layers, and has a long storage time.
