Abstract

The invention discloses a processing system of marinated soft boiled eggs, which at least comprises a raw material quality control module used for screening and cleaning raw material eggs; the cooking and centering module is used for cooking and centering the eggs subjected to quality control, and the cooking and centering means that the yolk is kept in the center area of the eggs when the eggs are cooked; the shelling and selecting module is used for shelling and selecting the steamed and centered eggs; and the soaking and flavoring module is used for soaking and flavoring the qualified eggs picked out after shelling. According to the invention, improvement and control are carried out from key nodes of raw egg preparation, cooking, shelling, soaking and the like, so that microorganisms and soft boiled degree in the marinated soft boiled eggs are controlled, and wide-temperature-range quality guarantee of the marinated soft boiled eggs is realized.
