The method comprises the following steps of: adding nicotinamide ribose phosphate transferase and nicotinamide mononucleotide adenosine transferase to carry out bio-enzyme catalysis, so that a target reaction can be accurately catalyzed, the generation of NMN is promoted, the generation of byproducts is reduced, and the extraction efficiency can be remarkably improved, thereby greatly improving the purity and activity of the purified NMN; according to the method, the NMN is efficiently prepared by fermenting the tomatoes in a manner of combining fermentation and bio-enzyme catalysis, the purity of the NMN extract can reach 99% or above, the process is green and environment-friendly, the raw materials are low in cost and wide in source, and the method can be suitable for large-scale industrial production.
