Processing technology of walnut oil antioxidant

Abstract

The present application relates to the technical field of plant oil antioxidant, in particular to a walnut oil antioxidant processing technology. The walnut oil antioxidant processing technology comprises the following steps: preparing activated molecular sieve, preparing deep eutectic solvent, preparing antioxidant and walnut oil antioxidant processing technology. In the present application, ferulic acid, n-octanol and geraniol are co-enzymatically solidified to obtain an antioxidant. The phenolic hydroxyl group in the molecular structure of ferulic acid can capture free radicals and block chain reactions. The presence of n-octanol is to esterify with ferulic acid, thereby improving the stability and free radical combination ability of ferulic acid. Geraniol, as a monoterpene alcohol, has certain antioxidant activity itself. After esterification with ferulic acid, geranyl ferulate can be synthesized, which can more efficiently deal with various types of free radicals, thereby improving the antioxidant effect of walnut oil.
