Abstract

This invention discloses a highly stable ergosterol lipid nanodispersion and its preparation method, comprising, by mass percentage: 0.5-5% ergosterol, 5-20% composite lipid carrier, 2-8% emulsifier, 0.1-2% stabilizer, 0.05-1% antioxidant, and the balance being deionized water; wherein the composite lipid carrier is a mixture of solid lipids and liquid lipids, and the mass ratio of solid lipids to liquid lipids is 1:0.2-1:1. This invention relates to the field of food additives and bioactive substance delivery technology. By using a composite lipid carrier to encapsulate ergosterol, the advantages of good stability of solid lipids and excellent dispersibility of liquid lipids are combined, providing a stable encapsulation environment for ergosterol while improving the dispersibility of the nanodispersion. The stability of the nanodispersion is further improved by compounding emulsifiers and adding stabilizers and antioxidants, effectively inhibiting the oxidative degradation of ergosterol and extending the shelf life of the product.
