A method for preparing a fat-soluble plant pigment with antioxidant properties belongs to the field of anthocyanin esterification technology. The method involves using Novozymes lipase 435 to esterify dodecanoic acid with the natural pigment petunidin-3-O-rutinoside (trans-coumaroyl)-5-O-glucoside to obtain the reaction product. The reaction medium is tert-butanol; the reaction temperature is 55-65℃; and the reaction time is 70-74 hours. This invention significantly enhances the lipophilicity of anthocyanins while retaining their antioxidant activity; the esterification reaction conversion rate is 68%. Furthermore, it features simple operation and good reproducibility, expanding the application range of natural plant pigments and providing a new approach for developing fat-soluble plant pigments with antioxidant effects. This technology can be applied to food, health products, cosmetics, and other fields.
