Abstract

The present invention relates to a method (or process) for the production of rotundone by the allylic oxidation of α-guaiene in the presence of catalytic amounts of iron(II) phthalocyanine (FePc). The present invention also provides for the use of iron(II) phthalocyanine (FePc) in the allylic oxidation of α-guaiene to produce rotundone. The invention further provides for rotundone obtained by the method described herein.
