Abstract

The invention relates to probiotic beet juice and a process for its production. In this process, microorganisms with proven probiotic properties, derived from beet juice, are processed in free or microencapsulated form and used in the production of beet juice. With sufficient and regular consumption of the resulting probiotic beet juice, positive effects of the probiotics on health can be observed.
