Description
* The present invention relates to all cutting machines whose operation is not satisfactory for lack either of an adequate design or of a device which allows sharper and more regular cuts. t The current state of the art can be summarized by the following patents: - ENG. 2,223,946 - ENG. 2,269,865 - FR. 2,340,050 - ENG. 2,410,438 - FR. 2,422,335 - FR. 2,579,870 - OF. 33 17 625 A1 - OF. 35 39 913 A1 * The present invention overcomes these various drawbacks by the following devices: A) LIN STEEL CUTTING DISC very thin on its circumference and rotating very quickly around a horizontal axis thanks to an electric motor or a turbine running on compressed air. This cutting disc (3.) is integral with a slider (1). B) LIN FORTE-OUTIL (9) moving above the dough piece to be scarified, along its longitudinal axis; the actuator is either a pneumatic cylinder or an electric motor. In this tool holder, in the form of a plate, a sliding path (2) curvilinear in the vertical direction is machined; C) A FIXED PLATE (10), in which is machined a horizontal raceway (8) having a defined shape (sinusoidal for example); D) A CURVILINEAL SLIDE (1) sliding in the path (2) and carrying on one side, the cutting tool (3) and on the other, a roller (7) housed in the path (6); During the horizontal displacement of the tool holder (9), the roller (7) housed in the path (8) follows the shape of the latter and therefore causes the slider (1) in a movement defined in its path (2) Ç which has the effect of causing the tip of the tool (blade) or the edge of the disk (3) to travel through a certain curve on a cylindrical surface (19). Under these conditions, the cutting tool executes a longitudinal notch (4) having any shape or a series of scarifications of length and shape defined according to requirements. According to a second embodiment of the invention, the slider (1) consists of 2 curvilinear wings which enclose a curvilinear plate itself which moves longitudinally as a tool holder (9). E@ ONE JE@ OF SALAIS BY CUTTING TOOL, regularly moistened with a drip and whose function is to eliminate the particles of paste which attach themselves to the tools while lubricating the latter between 2 cutting sequences. If the tool is a blade, 2 cylindrical brushes, made up of steel, copper or nylon strands, are moistened and lay down tangentially along the 1 blade and on each side of it, in running very quickly in the opposite direction and from the center of the blade towards the end. According to a second embodiment of the invention, in the case of the cutting tool being a disc, these are 2 pads (felt, steel, copper or nylon wires) which are pressed against the 2 faces of the disc which continues to rotate during the cleaning and lubrication operation. According to a variant of this second embodiment, the pads are made of a material which not only makes it possible to carry out the cleaning and the lubri@ication, but also ensures the sharpening of the wire of the disc. In the @ das. this phase of cleaning and lubrication is carried out during the resting phase of the tools (return of the trolleys@s o@ special phase programmed in the automaton). F@ IN CONCLUSION, the scarifications made in the dough pieces will have the desired shape thanks to the shape of the horizontal raceway (@) which will simply be the projection on the plate (10) of the expected @@arifications. The combination of 2 movements, on the one hand the longitu dina@ and rectilinear displacement of the tool holder (9), on the other hand the cu@viligne and lateral displacement of the slider (1), makes describe at the end of the cutting tool (3) a given curve (4) on the surface of a cylinder of diameter slightly smaller than that of the dough piece. @this same combination of the 2 movements seen above determines a variable @nclination and height of the cutting tool (3) depending on the position of the tool holder (9) since the cutting tool (3) always remains perpendicular to the surface of the cylinder. Finally. the humidification of the cutting tool (3) is ensured by a very conventional drip device which delivers water or cooking oil to the pads or the brushes (not shown in the drawing @. @ The devices according to the invention can be used in sufficient applications: notching of all bread or pastry products; marking or notching or cutting of all pasty products.
Claims
DEMANDS i- Device according to claims 1, 4 & 8, of patent application no. 88 00 388, characterized by the fact that the cutting tool is a steel disc rotating rapidly thanks to an electric motor or a turbine driven by compressed air. 2- Device according to claims 1.4 t 8, of patent application no. 88 00 388, characterized by the fact that the cutting tools have a variable height and inclination depending on the position of the tool holder above the product to be scarified. - Device according to claim characterized by the fact that the pivoting of the tools is obtained by the movement of a slide on the surface of a cylinder by means of a curvilinear path cut into the tool holder. 4- Device according to claims 2 & 3, characterized by the fact that the pivoting of the tools is obtained by the movement of a slide on the surface of a tool holder having a cylindrical shape. 5- Device according to claims 2, 3 and 4, characterized by the fact that the slide is assisted by a roller circulating in a raceway supported by (or cut into) a fixed plate; this raceway is the projection of the shape of the scarifications that one wishes to obtain 6- Device according to claims 2, 3, 4 & 5, characterized by the fact that the tool holder can be raised during its horizontal movement above the dough so that the scoring is discontinuous. 7- Device according to claim 1 of application 8800388, characterized by the fact that the humidification and cleaning of the tools are carried out by a pair of cylindrical brushes, rotating rapidly in opposite directions and which come to rest on each side of the blade; these brushes have an axis of rotation which is parallel to the edge of the blade. 8- Device according to claim 1 of application 8800388, and according to claim 1 of this application, characterized by the fact that the humidification and cleaning of the cutting discs are carried out by a pair of pads which press against the 2 faces of the disc, always in rapid rotation, in the manner of disc brakes. 9- Device according to claims 7 & 8, characterized by the fact that the brooms or pads are moistened by a drip system delivering either food-grade oil or water during the cleaning phase. 10- Device according to claims 1 & 8, characterized by the fact that skates, by their nature, are likely to assume, in addition, a guiding function.
