Method for manufacturing a cooking aid based on minced meat

Abstract

This process for manufacturing a culinary aid (9) based on fresh minced meat comprises the steps of: - selecting a batch of meat for mincing, - subjecting this batch of meat to initial grinding, - compacting the ground meat to obtain a plurality of meat loaves (3a, 3b), - subjecting these meat loaves to cryogenic dehydration, - homogenizing the cooling temperature of these meat loaves, - slicing these meat loaves to the desired size.
