Abstract

[Refer to original abstract doc for image] Disclosed is a consumable flavour material comprising at least one fermented plant product, the fermented plant product comprising a plurality of flavour compounds having formula A, wherein: X is N(Z), O, or S; Z is H, R1-R4, OR2, S(R2), S(O)(R2), SO2(R2), or N(R2)(R3); and R1-R4 are H, OH, C2-C12 alkenyl, C2-C12 alkynyl, C5-C12 aryl, C4-C12 heteroaryl, or C(O)Z. The flavour compounds are preferably 3-furaldehyde, 5-methylfurfural, and 5-hydroxymethylfurfural. The consumable flavour material may comprise further flavour compounds. The fermented plant product may comprise a fermented grain product, preferably a barley product produced by incubating it with Aspergillus oryzae or Bacillus subtilis. Further disclosed is a method for preparing a consumable flavour material. [See above]
