Abstract

This invention relates to the concentration of active metabolites from the probiotic bacteria Lactobacillus brevis UM2 to inhibit pathogenic bacteria such as Escherichia coli, Bacillus cereus, Staphylococcus aureus, and Salmonella enterica. Generally, these bacteria contaminate various types of food, such as fresh products (fruits and vegetables) and livestock products and their derivatives that are not cooked or pasteurized (meat, eggs, milk, cheese). The effects caused by food contamination by these bacteria are the emergence of diseases such as diarrhea and gastrointestinal infections. This invention discloses the amount of active metabolite concentration from the probiotic bacteria L. brevis UM2 of 3.84% proven to be able to inhibit the growth of E. coli ATCC 25922, B. cereus FNCC 0057, Staphylococcus aureus ssp. aureus ATCC 6538P PK / 5, and Salmonella enterica sv. Typhimurium ATCC 14028 PK / 5.
