RS 5 INSTANT RICE FORMULA MADE FROM RED RICE WITH THE ADDITION OF OLIVE OIL AND ITS MANUFACTURING PROCESS

Abstract

This invention is a formula for instant RS 5 rice with the addition of olive oil and its manufacturing process. Instant RS 5 rice is made from brown rice, sodium citrate for soaking the rice before cooking and the addition of olive oil when cooking the rice. The process of making instant RS 5 rice begins with weighing the rice according to the formula, making a sodium citrate solution for soaking the rice before cooking, washing, draining, cooking the rice with the addition of water and olive oil, cooling, freezing, drying and packaging. The main objective of this invention is to provide a formula for instant RS 5 rice made from brown rice with the addition of olive oil. While another objective of this invention is to provide a process for making instant RS 5 rice made from brown rice with the addition of olive oil.The next objective of this invention is to provide instant RS 5 rice that is more practical to carry, more efficient in preparation time because it can be brewed with hot water, has phenolic content, antioxidant activity and higher levels of resistant starch and is sensorially accepted by panelists.
