Abstract

This invention relates to the field of food technology, specifically the formulation and method of making natural energy gels based on local raw materials. The invention is a MOCKISA product (MOCAF–Passion Fruit–Honey) that utilizes Modified Cassava Flour (MOCAF), passion fruit juice (Passiflora edulis), natural honey, and pectin as gelling agents. MOCAF flour functions as a source of carbohydrates, passion fruit juice as a source of vitamin C, antioxidants, and natural flavors, while honey functions as a natural sweetener as well as a source of fast-absorbing energy. Pectin is used to produce a stable and easy-to-consume gel texture. The manufacturing process includes preparation of ingredients, extraction of passion fruit juice, mixing ingredients according to the formulation, heating with stirring until homogeneous, gel formation, filling into sachet packaging, and sealing. The resulting product has a semi-solid texture, is practical to consume, and utilizes local commodities as the main raw material.This invention provides an alternative energy gel based on local resources that has the potential to increase the added value of cassava through MOCAF, the use of passion fruit, and the diversification of honey use, thereby supporting the development of functional foods and the downstreaming of regional agricultural products.
