Description
DESCRIPTION Technical Sector of the Invention The general scope of the present invention is to systems of 5 suction and treatment of air in closed environments. More specifically, it focuses on the production of a particular suction system innovative for the suction and treatment of steam produced by a particular type of ovens, such as steam ovens, in their various versions. Technical Note 10 In kitchens in general, and in the kitchens of catering establishments in a very accentuated, it is important to manage the fumes and vapors that are produced during cooking. In the context of catering, in fact, significant quantities of food are cooked, for several hours, and therefore considerable quantities of fumes and vapours are produced, which cannot simply be dispersed into the environment. 15 Furthermore, these places are working environments where it is also necessary to take care of the well-being of the workers, who must be guaranteed adequate air quality; therefore the kitchens restaurants are places equipped for this purpose, with efficient extraction systems and treatment of air, fumes and vapours in general. However, there are cases in which professional catering provides an offer that requires 20 prepare and serve food in temporarily set up environments, for example the large variety of catering services, for which there is a significant growth in request. When food services are to be offered in settings other than a restaurant equipped with a fully equipped professional kitchen, the practice note provides 25 to adapt the menu to the actual preparation possibilities offered by the environment in which the catering service must be provided. In less favorable cases, it happens that only cold dishes can be served, which must be prepared elsewhere. In other cases the environment only allows for heating some dishes, these too prepared elsewhere; it is clear that being able to only heat up food, they must choose dishes that maintain their optimal palatability even if they are not 5 served express, thus reducing the offer possibilities. In other cases, a small kitchen may be available, and then it is possible to propose some freshly prepared dishes, but in that case the problem could be related to quantities or odors, if the kitchen was not properly equipped to handle these aspects. 10 To expand the range of dishes that can be offered in environments equipped with non-professional kitchens, or only partially equipped, or even environments not equipped at all not a real kitchen at all, but only a room for various tasks conformed, the offer is exploring an evolutionary trend that is based on the use of ovens particularly versatile, which can be taken wherever needed when needed, and which are 15 suitable for carrying out very different cooking methods. Among these ovens, the so-called steam ovens are particularly interesting, as they can using even steam at very high temperatures (even up to 300°C or more) allows for run cooking programs capable of covering a very high number of recipes which, If done using traditional techniques, they would require many different tools. 20 The technologies associated with these steam ovens are already extremely advanced today because allow the creation of highly programmable ovens, with self-washing functions, and therefore suitable for use even by a fairly small kitchen staff. We will not dwell here on the offer of steam ovens, for which refers to the material published by the various suppliers. For the purposes of illustrating this 25 invention it is enough to underline only some characteristics of these objects. A steam oven is a parallelepiped-shaped oven with the typical dimensions of normal resistance or microwave ovens. Obviously there are various sizes, but However, they have dimensions that range within a fairly defined and limited range. Their operation obviously requires electrical power, but also a circuit 5 hydraulic system that brings the water needed to generate the steam and then takes care of the drainage of fluids condensed after cooking. These steam ovens are extremely flexible and easy to use objects, because they perform cooking programs that allow you to prepare practically any dish in a highly automated, so as not to require the presence of one or more particularly skilled cooks 10 experts. From this point of view, they are devices that appear very comfortable to use. in temporarily set up kitchens and to manage catering during events temporary; however they also have a strong contraindication that tends to limit their use: in fact they produce and expel considerable quantities of steam, which requires 15 to be treated properly, these are quantities that absolutely cannot be be dispersed into the environment. In particular, when the door of a steam oven is opened to remove cooked food, a lot of steam comes out, loaded with various substances resulting from the cooking process, and which must be immediately aspirated by a system that provides cooling 20 the condensation and discharge of the fluids that form. Precisely because of this problem of managing steam emissions, to date, the large Most steam ovens, although they are relatively compact, flexible and easy to use, they are designed for use in professional kitchens, where air treatment aspects are managed (or at least manageable) adequately. 25 In fact, the problem of managing the steam emitted by steam ovens does not yet have a solution fully satisfactory solution, and therefore it is possible to resort to the use of such ovens only where the context offers particularly favourable conditions. Purpose and summary of the invention The general purpose of the present invention is therefore to provide a solution that allows you to benefit from the great versatility of steam ovens even in temporarily set up environments. 5 In particular, the invention aims to propose a trolley to house a furnace steam so that it can be used almost anywhere. And this trolley also to guarantee all functional requirements, relating to electrical and hydraulic power supply and in order to manage the waste fluids, it must also provide for the absorption of the vapours emitted from these ovens, to their treatment and to the reduction of odors resulting from the cooking of the 10 foods. Ultimately, it is essential that the use of these ovens does not lead to dispersion into the environment. of vapors perceptible in any way; in other words the humidity of the environment must not be increased and no odors generated by cooking should be perceived; any odors the food served must be perceived as it would be if the dish had been 15 prepared in a kitchen well separated from the room where the oven is located. The purposes set for this invention are achieved by using a particular trolley to house a steam oven shaped such as to have a base and a upper face substantially flat and parallel (typically such ovens have approximately a parallelepiped shape, but other shapes are also possible, e.g. 20 example prisms). And said cart: ✓ includes a lower support block Suitable for supporting a steam oven, offering a substantially flat support surface; ✓ features a vertical rear backrest, which stands along one side of said plane of support, which has a thickness sufficient to contain a suitable compartment for 25 to house some elements for the passage and treatment of steam, and has a mechanical structural strength sufficient to support a suction element induction by supporting it from one of its side edges; ✓ includes a top inductive suction system that features a face substantially flat lower part, and which is supported by one of its lateral edges by the said vertical rear backrest. - is supported by one of its lateral edges by the said vertical rear backrest and 5 extends substantially over the entire support plane of the block of lower support, and - the distance between said support plane of the lower support block and said lower face of said upper inductive suction system is slightly greater than the distance between the base and the upper face of the oven which must 10 be housed on said trolley. And this trolley is characterized by the fact that: called upper inductive suction system: ✓ extends substantially over the entire support plane of said block of lower support, and 15 ✓ the distance between said support plane of the lower support block (130) and said lower face of said upper inductive suction system (110) is slightly greater than the distance between the base and the upper face of the oven which must be housed on said trolley, ✓ also has at least 20 - a first suction slot located along the side of the lower face of said inductive suction system opposite to the side from which said system of upper inductive suction is supported by said rear seat backrest vertical, and - a second suction mouth positioned in a suitable way to facilitate 25 the suction of the steam emitted from the steam vent which is present in all steam ovens to adjust the parameters inside the oven's cooking compartment same; and said vertical rear backrest has an internal compartment where there are: ✓ one or more spray nozzles of nebulized water that mixes with the steam and cools down, and ✓ condensation ducts that separate most of the steam from the air flow. 5 and said lower support block contains within it: ✓ a mechanical forced ventilation system suitable for extracting air ✓ a condensate collection tank ✓ one or more first inertial filters suitable for blocking the passage of water as well as some fatty substances, 10 ✓ one or more second synthetic filters (preferably Viledon filters) suitable for eliminating further coarse particles, ✓ one or more third activated carbon filters suitable for deodorising the air drawn in by the said mechanical forced ventilation system before being released into the environment, ✓ of the exit slots positioned in the lower part of said support block 15 lower to let out the purified and substantially odorless air produced in the process of treating the steam in turn produced by the said steam oven. In a preferred embodiment, said lower support block is equipped with support feet or wheels that keep it raised from the floor and that facilitate its movement. In this case, said exit slots are preferably 20 positioned on the lower face of the support block and the extracted air comes out from under the cart. In other preferred implementation forms, said trolley proposes in the face of said vertical rear backrest facing the oven the hydraulic arrangements that are necessary for the operation of the oven itself, while the provisions to provide 25 the electrical power supply to the oven is preferably made available at the lower support block. The main advantage of the present invention is that its teachings allow you to fulfill the purposes for which it was designed. Furthermore, the invention also has further advantages, which will become more evident from the following description, which illustrates further details of the invention itself through some implementation forms, from the attached claims, which form an integral part of the 5 this description, and from the attached figures in which: ✓ Figure 1 schematically shows the external conformation of a trolley according to the invention, and how it fits into the oven it is meant to support; ✓ Figure 2 shows, schematically, a lateral vertical section of a trolley according to the invention. 10 Detailed description As anticipated in the first part of this description, the problem addressed for conceiving the present invention is a rather complex and articulated problem because aims to achieve a plurality of objectives. In fact, the solution sought must guarantee optimal absorption of the vapours emitted by 15 a steam oven (it therefore has a functional objective), but it must also present characteristics of compactness and ease of transport and set-up (and therefore addresses also logistical and setup convenience objectives). In Figure 1, indicated by the number 100, a trolley for a steam oven is shown, and conceived according to the invention. Figure 1 focuses on some features of shape and 20 on how a steam oven, indicated in Figure 1 with the number 200, should be placed on this trolley. The representation given in Figure 1, however, is not entirely realistic, and must be intended as a schematic representation, and constructed for purely explanatory purposes, to illustrate the main volumes that constitute the system according to the invention, therefore 25 the proportions of the various parts and other potentially external details are not relevant deducible from the figures. The 100 steam oven trolley can be roughly divided into three volumes: ✓ at the top there is a first volume which constitutes the inductive suction system upper, which is indicated in Figure 1 with the number 110; ✓ in the center, and on the opposite side to the access to the 200 oven, there is a backrest vertical rear, indicated in Figure 1 with the number 120, and structurally suitable 5 to support the upper inductive suction system 110; ✓ finally, at the base there is a third support block, indicated in Figure 1 with the number 130, and structurally suitable to support the 200 steam oven in a comfortable position to be used by an operator. The mutual positioning of the blocks 110, 120 and 130, listed above, delimits the 10 formation of a compartment in which a steam oven 200 can be inserted and housed. The trolley 100 according to the invention must be able to be made with different dimensions in to fit different 200 ovens. In fact, steam ovens, although they are very innovative systems, are well-known systems and are products from different suppliers offering products with different sizes. What they have in common 15 different steam ovens offered on the market are that they have a substantially flat base, suitable for placing such ovens on a surface (be it a ground surface or a raised surface) and an upper face which is also substantially flat. To make the invention work with maximum efficiency it is very important that the lower face of the inductive suction system 110 is located very close to the face 20 upper part of the oven 200. Therefore, the different versions of the trolley 100 must have a distance between the support plane of the support block 130 and the lower face of the 110 inductive suction system, slightly higher than the height of the ovens to accommodate the which are designed. Other features that are almost universal in all 200 steam ovens concern the release 25 of the steam. In fact, every 200 steam oven must include: a vent, indicated in Figure 1 with the number 220, and which is essential to regulate the internal pressure of the ovens, letting out any excess steam, and a hatch, indicated by the number 210. The primary function of the door 210 is to access the cooking area inside the oven, to put the food to be cooked, and to recover the cooked food, but, evidently, when when opened, after cooking has been completed, a large quantity of liquid comes out of it cloud of cooking steam. 5 The extraction system must therefore be able to extract the steam promptly which comes out of the two openings mentioned above, and this suction must take place as much as possible near the points where the steam is released, otherwise some of it may disperse in the environment. As can be seen from the illustration in Figure 1, the steam oven 200 can 10 be easily placed on the support surface of the support block 130 by doing so scroll horizontally, as indicated by the arrow marked with the number 201, and to facilitate the installation of the oven, in the preferred implementation forms of the trolley 100, it is relatively simple to bring both the hydraulic connections and the electrical appliances that are necessary for the operation of the 200 oven itself. 15 Typically, the hydraulic connections are located on the inside of the backrest rear 120, while the electric ones are placed in the lower storage compartment. This way, to set up a cooking station, you just need to bring the power supply and a hydraulic connection to the trolley 100, and the oven 200 can in turn be connected without the need for messy connections that have to go up to the oven from the outside. 20 Finally, in Figure 1, the number 101 indicates the wheels that support the entire trolley 100. The presence of such wheels 101 also represents a particular optional implementation, which however has a certain utility, given that in this this way it is easier to move the trolley, to place it from time to time (depending on of cases) in the most convenient and comfortable position. 25 After having appreciated, with the help of Figure 1, the main characteristics of the shape of the trolley 100 for steam ovens, with the help of Figure 2 we move on to examine the main internal features of the 100 trolley. In fact, the various volumes that make up the trolley 100 are also particularly suitable for containing a plurality of components essential to implement the functions of extraction and treatment of vapours in a very effective. Figure 2 shows a side section of the carriage 100 according to the invention, in which it is 5 inserted a 200 steam oven, of which Figure 2 shows only the outline, represented with a dotted line. Indicated by the number 300, the steam coming out of the oven is shown. Please remember that this steam 300 is a steam resulting from cooking a dish, therefore it is a steam loaded with other substances, mainly fatty, and generally very odorous. 10 A first, larger cloud of steam is represented in front of oven 200, and it is the cloud which forms when the oven is opened. This steam must be intercepted and extracted. as soon as possible, and as close as possible to its exit point; therefore, along the front end (i.e. towards the oven access face) of the lower face of the upper suction system, there is a first suction slot, shown in 15 Figure 2 in cross-section, and indicated with the number 111. Within this system of the upper inductive suction 110 a depression zone is forcibly created which determines, precisely, an inductive suction effect powerful enough to suck up, essentially in its entirety, the steam 300 that comes out of the front door of the oven 200. 20 A second, smaller, steam cloud is shown above oven 200, and is the cloud which is formed when, as a result of adjustments necessary for the operation of the oven itself, some of the steam must be expelled. This steam must also be intercepted and aspirated as soon as possible, and as close as possible to its exit point; therefore, on the lower face of the upper inductive suction system, 25 appropriately positioned, depending on the oven 200 for which the trolley is intended to be used to couple, there is a second suction mouth, shown in Figure 2 in section transverse, and indicated with the number 112. This steam 300 is also then aspirated, due to the effect created by the depression inside the inductive suction system upper 110, and also flows into the intake block from which it comes flowed towards the vertical rear seatback120. In some implementations, the path that said steam 300 must travel before 5 to reach said vertical rear backrest 120, provides for its channeling through pipes shaped to lengthen the route and to mix the steam same with air taken from outside through special grilles placed in the duct upper suction, so as to start an initial treatment of the steam 300, for the purpose of its disposal. In Figure 2, the number 312 indicates the amount of air taken from the environment 10 external, which, passing through a suitable collection grid, indicated in Figure 2 with the number 113, it mixes immediately with the steam 300. This first mixing between the air environment 313 and steam 300 is recommended but not essential, and can take place capturing external air through one or more collection grilles positioned in the bodywork of the upper inductive suction system 110, with some design discretion. 15 However, the first really essential treatment occurs when the steam 300 (mixed or less with air coming from the environment through special grilles), reaches the area rear vertical backrest height 120. In this area, there is a spray nozzle, indicated in Figure 2 with the number 121, which emits a jet of nebulized water, indicated in Figure 2 with the number 311. Steam 300 20 (possibly already pre-mixed with ambient air 313) and nebulized water 311 yes mix, initially giving rise to a saturated vapour, indicated in Figure 2 with the number 320, much richer in water, colder, and in which the fluid part tends to separate from the airy side. Both due to the effect of forced suction and gravity, the saturated steam 320 precipitates until 25 to reach the lower support block 130, where most of the water and fat are now condensed and in liquid form, and can be collected in a tank of condensate collection, indicated in Figure 2 with the number 131. The condensed substances, which separate from the saturated steam 320 are indicated in figure 2 with the number 321. As mentioned, most condensates separate spontaneously during the descent. of saturated vapors 320 along the vertical rear seat 120, which can be 5 appropriately shaped with serpentine paths that further favor the condensation processes, but a part of humidity and other substances, mostly fat, they still remain mixed in the form of gaseous vapor. It is therefore important to provide additional filtering. In the internal area of the lower support block 130 which is located immediately below the 10 vertical rear backrest 120 a first compartment is therefore obtained, indicated in Figure 2 with the number 137, delimited below by said condensate collection tank 131 and, laterally, as well as from the walls of the lower support block 130, also from a first filter septum, indicated in Figure 2 with the number 132, consisting of one or more inertial filters, suitable for blocking the passage of water and the main fatty substances still suspended 15 in the steam that occupies said first compartment 137. Said first filtering septum 132 separates said first compartment 137 from a second compartment, indicated in Figure 2 with the number 138, inside which pre-filtered air enters, coming from from the said first compartment 137: air which is therefore already sufficiently purified and dehumidified, and is indicated in Figure 2 with the number 322. 20 In preferred embodiments, said first filter septum 132 is positioned so to be inclined towards the condensate collection tank 131, so that the humidity and the fatty substances retained by it can drain as much as possible into the same tank condensate collection 131. Said second compartment 138 is delimited laterally, in addition to said first filtering septum 25 132 (which separates it from the compartment 137), from the walls of the lower support block 130, and is also delimited below by a second filtering septum, positioned substantially with horizontal orientation, indicated in Figure 2 with the number 133. Said second filter septum 133 is preferably made of “viledon”, or in any case with a technology suitable for filtering the coarse particles still present in the pre-filtered air 322. Passing through said second filter septum 133, the pre-filtered air 322 is purified and invades the lower part of said lower support block 130, where it is 5 placed the mechanical forced ventilation system, indicated in Figure 2 with the number 134, which determines all the flow of vapors that has been previously described. This purified air, indicated in Figure 2 with the number 323, is almost free of substances greasy and coarse particulate matter, and therefore does not significantly dirty the elements mechanics of the forced ventilation system 134, and does not damage the subsequent battery of 10 activated carbon filters, indicated in Figure 2 with the number 135, and towards which the air purified air 323 is conveyed by the forced ventilation system 134. The need for further filtering, to be carried out with the aforementioned battery of activated carbon filters 134, is necessary to deodorize the purified air 134, so that it can be released in the environment. Due to the way the said trolley 100 is shaped, the purified air and 15 substantially odorless, indicated in figure 2 with the number 340, is introduced in the environment practically at ground level, through exit vents. Therefore said 340 air, purified and substantially odorless, is diffused into the environment at a height such which does not cause any discomfort, even if the trolley is placed in an environment where there are many people. 20 In the case of preferred implementation, where the trolley 100 is slightly raised from the ground due to the presence of the wheels 101, the air jet 340 expelled from the system would be emitted just under the trolley 100, and directed vertically, to crash towards the floor, and for then disperse in all directions noticeably attenuated. Ultimately, it can be concluded that a 100 trolley, made according to the 25 teachings of the invention, it is suitable for extracting cooking steam with excellent efficiency 300 emitted by a steam oven, and to disperse only purified air into the environment and odorless. The fatty substances with which the steam 300 is initially loaded, as well as the particles coarse waste is all retained inside the cart and can be disposed of in various Most of the grease condensate is collected in a collection tank. condensates 131 which can be discharged in various ways: for example by connecting it 5 directly into a drain suitable for use, or by removing it when full and washing it. other substances retained by the filters, however, can be disposed of together with the filters themselves when these are exhausted, or by washing these filters, if these are made with technologies and materials that can be maintained by washing. Finally, it is noted that activated carbon filters are preserved to last a long time as 10 are involved only at the end of the process, to treat air 323 already substantially purified from all the coarsest particulate matter. Variants and Concluding Considerations In summary, the teachings of the present invention enable one to satisfy the purposes for which it was conceived by exploiting in an unprecedented and particularly efficient way the 15 spaces that are available in a 100 support trolley equipped with an extension that is extends upwards and implements an efficient induction hood extremely compact. In the various internal volumes that are available inside the 100 trolley it was possible organize the placement of a series of elements that implement a process of 20 treatment of vapors 300 generated by a steam oven 200 during its operation. The technical content intuition consists in having organized spaces in an excellent way available within a very compact structure with oven support functionality 200 and an extractor hood that must be positioned extremely close of the oven itself, so as to obtain both highly efficient handling performances 25 of the vapors (suction) and both the treatment performance of the vapors themselves, where the two types of performance (suction and treatment) are combined and integrated in a way which does not seem to be able to be improved further. The optimization of the taught solution must also be understood with respect to parameters of energy and construction efficiency, reliability and maintainability. In fact, for all the movement of the vapours, in all the various treatment phases up to to expel clean and odorless air 340, it is sufficient to use a single mechanical system 5 active 134, based on a single engine, which however physically sucks only already purified air 322 reached the end of the treatment, with all the dirty substances retained or collected in previous points where their disposal is easier. From a maintenance point of view, the invention has allowed us to conceive a system overall organized so that all parts that require maintenance and cleaning 10 are easily accessible and removable, and the forced ventilation part is of the mechanical type 134, which is in direct contact with the air, and which represents the potentially most sensitive part delicate from the maintenance point of view, it only involves already cooled air and essentially clean. The inventive activity associated with the aforementioned intuition consists in the fact that, it 15 allows you to create a trolley for 100 steam ovens with new features (therefore new compared to the known offer) that solves a technical problem, which has its own undeniable importance, but which must however be resolved with a solution that is also realistically feasible in terms of costs, maintainability and complexity of use. The interest of the solution is indisputable because the possibility of benefiting from the great 20 advantages of steam ovens in temporarily set up catering environments is today a possibility that opens up to huge market prospects, given that it allows for the expansion in the offer of high-quality catering services in environments where such an offer is very significant It is still very limited. Therefore, it must be assumed that if the implementation of a 100-cart with the 25 features taught in the present invention were substantially an obvious implementation, and one that can be developed by a general expert in the field sector, it would certainly have already been proposed. Ultimately, the invention identifies and defines a series of characteristics fundamentals that a 100 steam oven trolley must have to solve the problem identified technician, which is to use steam ovens in environments that are not pre-arranged to manage the vapour emissions that these instruments produce. 5 The essential characteristics foreseen by the invention are in reality not few, because the problem required to efficiently combine all the components that are required for a steam treatment process that must necessarily be sufficient articulated. Furthermore, everything must be compacted into fairly small volumes, also dictated by from the need to create a trolley that is not bulky and easy to move. 10 However, beyond the essential characteristics (many or few as they may be), which are also explicitly stated in the independent claim (which is quite long for such a reason), the forms of implementation, with which the addressed problem can be solved can diversify for many other details, giving rise to different variants of the same one invention. 15 Some of these variants have already been discussed in the previous part of this document. description, highlighting the possibility of using different technologies and materials for create the filtering partitions, or when mention has been made of the possibility or otherwise of equipping the support trolley 100 with wheels or feet, or the various ways in which it is possible to carry or minus the hydraulic and electrical connections in the trolley to facilitate the necessary connections for 20 how the oven works Other variants, about which something has already been said, concern the possibility (and the necessity) of make several 100 trolleys, with different dimensions, to adapt each to a different steam oven model 200. However, the variants mentioned do not exhaust the possible cases, and the expert in the field 25 can certainly propose many others without going beyond the scope of the invention as it results from the present description and the claims herein attached which form an integral part of this description.
