Abstract
Description
[Technical field]
[0001] The present invention relates to an oral composition, an agent for suppressing unpleasant odors of a branched fatty acid having 6 or less carbon atoms, and a method for suppressing unpleasant odors. [Background technology]
[0002] Short-chain fatty acids having a branched chain with 6 or less carbon atoms naturally exist as components of essential oils in the form of free or esters. Such fatty acids are used in fragrances as aroma components at very low concentrations. In addition, it is known that short-chain fatty acids having branched chains are produced by intestinal bacteria in the human large intestine, just like short-chain fatty acids having straight chains, and although there are still many unknowns regarding their physiological actions, they are thought to have actions similar to those of short-chain fatty acids having straight chains. On the other hand, short-chain fatty acids having branched chains are known to be causative substances of unpleasant odors generated from various parts of the body and off-flavor odors present in foods, and since they have a unique odor, it is desirable to suppress them.
[0003] Linalool and geraniol are monoterpene alcohols, and are widely used in blending various flower essential oils, as cosmetic flavorings, and as food flavorings. It has been reported that adding linalool, geraniol, etc. to a beer-flavored beverage can provide a beer-flavored beverage that has a citrus scent and is inhibited from deteriorating in flavor and generating undesirable odors due to storage (Patent Document 1), and that adding linalool and geraniol to a sparkling beverage can provide a beverage with a pleasant odor not found in the past (Patent Document 2). It has also been reported that in the production of beverages containing linalool and geraniol, the flavor of the beverage is enhanced by adding lower fatty acids or their esters (Patent Document 3). However, it is not known what effect linalool and geraniol have on the unpleasant odor of short-chain fatty acids having branched chains. [Prior art documents] [Patent documents]

[0017] In this specification, the term "oral composition" refers to a composition that is unlikely to be harmful to human health and is primarily taken orally in normal social life, and is not limited to administrative classifications such as food, medicine, quasi-drug, etc. Therefore, the oral composition of the present invention refers to a wide range of foods and beverages that constitute general foods, health foods (functional foods and beverages), health functional foods (specified health foods, nutrient functional foods, functional food), quasi-drugs, medicines, etc., that are taken orally.
[0018] The oral composition of the present invention may be either solid or liquid at room temperature (20° C.±15° C.) and may take an appropriate form. Suitable embodiments of the oral composition of the present invention include, for example, a solid oral composition and a liquid oral composition.
[0019] The present invention is preferably used for oral compositions other than coffee beverages. Coffee beverages are beverages that allow the enjoyment of the roasted aroma unique to roasted coffee beans, and the roasted odor of the roasted coffee beans can mask the unpleasant odor of component (A), so it is considered that the unpleasant odor of component (A) of the present invention is unlikely to cause a problem. Since the content of (C) furfuryl mercaptan (hereinafter also referred to as "component (C)") in coffee beverages is usually 0.00006% by mass or more, it can also be clearly distinguished from the oral composition of the present invention. That is, the content of component (C) in the oral composition of the present invention is preferably less than 0.00006% by mass, more preferably less than 0.00003% by mass, even more preferably less than 0.00001% by mass, and most preferably substantially not contained. Here, in this specification, "substantially not contained" is a concept that includes not only the complete absence of component (C) in the oral composition, but also a concentration below the detection limit. The content of component (C) can be measured by an analytical method suitable for the condition of the measurement sample among commonly known measurement methods, for example, it can be measured by the GC / MS method. In addition, when measuring, the sample may be freeze-dried to fit the detection range of the device, or impurities in the sample may be removed to fit the separation ability of the device, as necessary.
[0020] Moreover, a coffee beverage is usually a beverage using roasted coffee beans including roasted coffee beans with an L value of less than 30. Therefore, the present invention is directed to an oral composition other than a coffee beverage using roasted coffee beans including roasted coffee beans with an L value of preferably less than 30, more preferably less than 32, even more preferably less than 34, even more preferably less than 36, even more preferably less than 38, and even more preferably less than 40. The roasted coffee beans may be those from which 90% or more of the caffeine has been removed. The content of the coffee content in the coffee beverage includes the coffee content extracted or dissolved from 1 g or more of roasted coffee beans in terms of green coffee beans per 100 g of content. The "green coffee bean equivalent value" is that 1 g of roasted coffee beans is equivalent to 1.3 g of green coffee beans (Revised New Edition Soft Drinks, Supervised by Japan Soft Drinks Association, Published by Korin, Published on December 25, 1989, p. 421). The type of coffee beverage is not particularly limited, but examples include coffee beverages, etc. defined in Article 2 of the "Fair Competition Code for the Labeling of Coffee Beverages, etc." revised and enforced on August 19, 2019, namely "coffee," "coffee beverage," "soft drink containing coffee," and "carbonated drink containing coffee."
[0021] The solid oral composition of the present invention can be made into a solid material that can be orally ingested as it is. Examples of the form include powder, granules, tablets, rods, plates, and blocks. The solid content in the solid oral composition of the present invention is usually 90% by mass or more, preferably 93% by mass or more, more preferably 95% by mass or more, and even more preferably 97% by mass or more. The upper limit of the solid content is not particularly limited, and may be 100% by mass. Here, in this specification, the "solid content" refers to the mass of the residue obtained by drying a sample in an electric thermostatic dryer at 105°C for 3 hours and removing volatile substances.
[0022] Examples of the solid oral composition of the present invention include foods, medicines, and quasi-drugs. Among them, solid foods are preferred, and powdered foods are more preferred, in that the effects of the present invention can be easily enjoyed. When the solid oral composition of the present invention is a solid food, examples thereof include confectioneries such as candy, candy, gum, chocolate, cookies, bread, etc.; and health, beauty and nutritional supplements such as supplements. Furthermore, when the solid oral composition of the present invention is a drug or quasi-drug, its dosage form may be, for example, granules, powders, tablets, pills, chewable tablets, lozenges, etc. Furthermore, when it is made into a tablet, it may be a divided tablet with a score line. Among these, the solid oral compositions are preferably supplements, powders, tablets, and granules.
[0023] The solid oral composition of the present invention may contain an acceptable carrier as necessary to make it into a solid form. For example, excipients (e.g., starches such as corn starch, potato starch, sweet potato starch, tapioca starch, etc.; dextrin; sugar alcohols such as xylitol, sorbitol, maltitol, lactitol, reduced palatinose, trehalose, palatinose, etc.; lactose; oligosaccharides; crystalline cellulose; light anhydrous silicic acid; calcium hydrogen phosphate, etc.), binders (e.g., hydroxypropylmethylcellulose, hydroxypropylcellulose, gelatin, pregelatinized starch, polyvinylpyrrolidone, polyvinylalanine, etc.), and the like may be used. Examples of carriers that can be used include carriers such as choline, pullulan, methylcellulose, hardened oils, etc.), disintegrants (e.g., carmellose, carmellose calcium, croscarmellose sodium, crospovidone), lubricants (e.g., calcium stearate, magnesium stearate, sucrose fatty acid esters, sodium stearyl fumarate, talc, silicon dioxide, etc.), flow improvers, flavoring agents (e.g., stevia, etc.), bulking agents, surfactants, dispersants, buffers, antioxidants, preservatives, quality stabilizers, diluents, etc., but it is preferable to select and use those that do not have an unpleasant odor. For example, dextrin, maltitol, and lactose are preferably used as excipients because they do not have an unpleasant odor.
[0024] The solid oral composition of the present invention may be an instant beverage composition. In this specification, the term "instant beverage composition" refers to a composition that is diluted with a liquid according to a prescribed method of use and orally ingested as a reconstituted beverage. The liquid is not particularly limited as long as it can be reconstituted into a beverage, and examples of the liquid include water, carbonated water, milk, soy milk, etc., and the temperature of the liquid does not matter. The dilution ratio may be according to the prescribed method of use, and is usually 30 to 800 times by mass, preferably 80 to 600 times by mass. When the oral composition of the present invention is in the form of a solid or concentrate such as an instant beverage composition, when diluted at a predetermined dilution rate, it is sufficient that the contents of components (A) and (B) described above are satisfied, and preferably the mass ratio [(B) / (A)] satisfies the above-mentioned requirements.
[0025] The solid oral composition of the present invention can be produced according to a conventional method, and an appropriate method can be adopted. For example, it can be produced by mixing component (A) and component (B), and if necessary, other components, so that the contents of component (A) and component (B) are within the above range. The order of mixing component (A) and component (B) is not particularly limited, and one may be added to the other, or both may be added simultaneously. As a mixing method, an appropriate method such as stirring or shaking can be adopted, but a mixing device may also be used. The mixing method of the mixing device may be a container rotation type or a container fixed type. The mixing order of component (A), component (B), and other components is not particularly limited, and they can be added in any order. In addition, examples of the liquid include water, carbonated water, milk, and soy milk, and the temperature of the liquid does not matter.
[0036] [Agent for suppressing unpleasant odor of branched fatty acid having 6 or less carbon atoms and method for suppressing unpleasant odor] The unpleasant odor suppressant and the unpleasant odor suppression method of the present invention contain at least one monoterpene alcohol selected from (B) linalool and geraniol as an active ingredient, and are used exclusively for suppressing the unpleasant odor of (A) a branched fatty acid having 6 or less carbon atoms. The specific configurations of (A) the branched fatty acid having 6 or less carbon atoms and (B) at least one monoterpene alcohol selected from linalool and geraniol are as described above. The unpleasant odor suppressant and unpleasant odor suppression method of the present invention can be achieved by allowing (A) a branched fatty acid having 6 or less carbon atoms to coexist with (B) at least one monoterpene alcohol selected from linalool and geraniol. In this case, from the viewpoint of unpleasant odor suppression, it is preferable to allow 0.01 ppm by mass or more of (A) a branched fatty acid having 6 or less carbon atoms to coexist with 0.05 ppm by mass or more of (B) at least one monoterpene alcohol selected from linalool and geraniol.
[0037] Furthermore, the unpleasant odor suppressant of the present invention can be applied not only to component (A) but also to oral products containing component (A). [0046] Examples 1 to 5 and Comparative Examples 1 to 2 Isovaleric acid and linalool were dissolved in 99.5% ethanol (manufactured by Fujifilm Wako Pure Chemical Industries, Ltd.) at each concentration, and mixed with 1 g of maltitol powder (Resis Fine Powder; manufactured by Mitsubishi Corporation Life Sciences Co., Ltd.) and 100 uL of the ethanol solution. The concentration of the ethanol solution was adjusted to the final concentration shown in Table 2. The mixture was left to stand at 50°C for 10 minutes to evaporate the ethanol, and a powdered oral composition was prepared. Analysis and sensory evaluation were performed on each oral composition. The results are also shown in Table 2.
[0047] [Sensory evaluation] The "unpleasant odor intensity of isovaleric acid" of the powdered oral compositions obtained in each Example and Comparative Example was subjected to a sensory test by two expert panelists according to the following procedure. First, an isovaleric acid reagent was used to prepare "isovaleric acid standard powders" in which the intensity of the "unpleasant odor of isovaleric acid" was adjusted in advance to five levels at equal intervals. The "isovaleric acid standard powders" were prepared by dissolving isovaleric acid at each concentration in 99.5% ethanol (manufactured by Fujifilm Wako Pure Chemical Industries, Ltd.) and mixing 1 g of maltitol powder (Resis Fine Powder; manufactured by Mitsubishi Corporation Life Sciences Co., Ltd.) and 100 uL of ethanol solution. The concentration of the ethanol solution was adjusted to the final concentration shown in Table 1. After leaving the mixture at 50°C for 10 minutes to evaporate the ethanol, the odor was evaluated by two expert panelists. It was agreed that the evaluation would be based on the score shown in Table 1 for the unpleasant odor intensity of isovaleric acid at each concentration by each expert panelist. Next, each expert panel evaluated the "isovaleric acid standard powders" in order of lowest isovaleric acid concentration, and memorized the "unpleasant odor intensity of isovaleric acid." Next, each expert panel evaluated the degree of "unpleasant odor intensity of isovaleric acid" when ingesting the test oral composition, and determined the "isovaleric acid standard powders" with the closest "unpleasant odor intensity of isovaleric acid." Then, a final score was determined by discussion based on the scores determined by each expert panel. Note that the smaller the score, the weaker the unpleasant odor intensity of isovaleric acid.

[0059] [Table 7]
[0060] Examples 29 to 33 and Comparative Examples 13 to 14 Isobutyric acid and linalool were dissolved in 99.5% ethanol (manufactured by Fujifilm Wako Pure Chemical Industries, Ltd.) at each concentration, and mixed with 1 g of maltitol powder (Resis Fine Powder; manufactured by Mitsubishi Corporation Life Sciences Co., Ltd.) and 100 uL of ethanol solution. The concentration of the ethanol solution was adjusted to the final concentration shown in Table 9. The mixture was left to stand at 50°C for 10 minutes to evaporate the ethanol, and a powdered oral composition was prepared. Analysis and sensory evaluation were performed on each oral composition. The results are also shown in Table 9.
[0061] [Sensory evaluation] Regarding the "unpleasant odor intensity of isobutyric acid" of the powdered oral compositions obtained in each Example and Comparative Example, a sensory test was conducted by one expert panelist in the same manner as for the "unpleasant odor intensity of isovaleric acid" above, except that the ethanol solution concentration was adjusted using an isobutyric acid reagent to the final concentration shown in Table 9, and the final score was determined. Since isobutyric acid has a higher olfactory threshold than isovaleric acid, the concentration of the standard was adjusted to have an odor equivalent to that of isovaleric acid. The smaller the score, the weaker the unpleasant odor intensity of isobutyric acid.

[0065] [Table 10]
[0066] Examples 39 to 43 and Comparative Examples 17 to 18 2-Methylbutyric acid and linalool were dissolved in 99.5% ethanol (manufactured by Fujifilm Wako Pure Chemical Industries, Ltd.) at each concentration, and mixed with 1 g of maltitol powder (Resis Fine Powder; manufactured by Mitsubishi Corporation Life Sciences Co., Ltd.) and 100 uL of ethanol solution. The concentration of the ethanol solution was adjusted to the final concentration shown in Table 12. The mixture was left to stand at 50°C for 10 minutes to evaporate the ethanol, and a powdered oral composition was prepared. Analysis and sensory evaluation were performed on each oral composition. The results are shown in Table 12.
[0067] [Sensory evaluation] Regarding the "unpleasant odor intensity of 2-methylbutyric acid" of the powdered oral compositions obtained in each Example and Comparative Example, a sensory test was conducted by one expert panel member using a 2-methylbutyric acid reagent in the same manner as for the "unpleasant odor intensity of isovaleric acid" above, except that the ethanol solution concentration was adjusted to the final concentration shown in Table 11. Since 2-methylbutyric acid has a higher olfactory threshold than isovaleric acid, the concentration of the standard was adjusted to have an odor equivalent to that of isovaleric acid. The smaller the score, the weaker the unpleasant odor intensity of 2-methylbutyric acid.
[0068] [Table 11]
[0069] [Table 12]
[0070] Examples 44 to 48 and Comparative Examples 19 to 20 Using geraniol instead of linalool, the same operation as in Example 39 was performed to obtain a powdered oral composition having the composition shown in Table 13. Analysis and sensory evaluation were performed for each oral composition. Sensory evaluation was performed in the same manner as in Example 39. The results are shown in Table 13.
[0071] [Table 13]
[0072] From Tables 2 to 13, it can be seen that by containing a predetermined amount or more of linalool and / or geraniol, an oral composition in which the unpleasant odors of isovaleric acid, isobutyric acid, and 2-methylbutyric acid are suppressed can be obtained.
