Abstract

The present invention relates to the field of food processing. More particularly, the present invention relates to a glazing composition, more particularly to a protein-free ready-to-use glazing composition that is applied after baking. The glazing composition combines hydroxypropylated phosphate crosslinked starch with hydroxypropyl starch. This particular combination of ingredients allows the glazing composition to impart a fine gloss / shiny appearance to baked or confectionery products without stickiness after storage in a sealed package.
