Abstract

The present invention provides a food manufacturing apparatus that can maintain high dimensional stability of food materials with a relatively simple apparatus configuration. [Solution] The food manufacturing apparatus 1 includes a first conveyor 12 that transports a sheet-like food material M at a first transport speed V1, a cutter 14 that cuts the sheet-like food material M into food material pieces N, and a transport roller 16 that transports the food material pieces N. The transport surface 16a of the transport roller 16 moves at a relatively slow second transport speed V2 until the sheet-like food material M or food material pieces N are placed on it, and then moves at a relatively fast third transport speed V3 for a predetermined time after the food material pieces N are placed on it. The third transport speed V3 is faster than the first transport speed V1 and the second transport speed V2. The food material pieces N that have been separated from the sheet-like food material M and transported by the transport roller 16 are passed to a drum 20 and transported.
