Abstract

To provide methods for fast germination of cereals and production of aqueous extracts of cereals, and manufacturing methods of beer including the methods.SOLUTION: A method for producing a beverage comprises the steps of: i. obtaining an aqueous extract of a cereal by a method comprising the steps of a) preparing grains of the cereal (cereal grains), b) subjecting the cereal grains to a step of germination for at most 96 hours thereby obtaining germinated grains, c) pulverizing the germinated grains while the germinated grains have a water content of at least 20%, and d) producing an aqueous extract of the pulverized germinated grains; and ii. processing the aqueous extract into a beverage.SELECTED DRAWING: None
