Abstract
The present invention relates to a stable composition containing an isothiocyanate. The present invention also relates to a method for stabilizing an isothiocyanate. According to the present invention, sulforaphane is stabilized in the presence of a fatty acid. A composition prepared by mixing sulforaphane with a certain amount of a fatty acid or a mixture of fatty acids exhibits a stabilizing effect on residual sulforaphane. It has been found that such a composition can more effectively maintain, i.e., stabilize, sulforaphane, expressed as a weight percent, under certain storage conditions compared to neat sulforaphane. This facilitates the distribution of sulforaphane as an ingredient for industrial use, for example, in the preparation of various products, nutraceuticals, food additives, pharmaceuticals, dietary supplements, cosmetics, etc., for easier and more efficient long-term storage. Complex stabilization techniques, such as encapsulation or complexation, and extremely low temperatures are not required.
