A mixed flour for hand-stretched dried noodles, comprising wheat flour and potassium lactate, and possibly containing salt, wherein the amount of potassium lactate is 1.6 to 6.2 parts by mass per 100 parts by mass of wheat flour, and the salt content is 1.5 parts by mass or less per 100 parts by mass of wheat flour.
