Abstract

The present invention relates to a method for manufacturing a gochujang sauce with improved taste, aroma, color, and palatability without the addition of artificial sweeteners, derived from jocheong produced by a traditional method using a cauldron and a wood fire, and to the gochujang sauce manufactured therefrom, comprising: a) a first step process of preparing a bitter melon extract; b) a second step process of cooking steamed rice with sorghum or roasted sorghum and onions; c) a third step process of mixing the steamed rice, malt extract, and water to saccharify and produce a saccharified liquid; d) a fourth step process of mixing the saccharified liquid and the bitter melon extract, aging the mixture, placing it in a cauldron, and heating and concentrating it with a wood fire to produce jocheong; and e).
