Description

Technology Field

[0001] The present invention relates to an anti-obesity or antioxidant composition comprising enzyme-treated fruit, and a method for preparing the same. Background Technology

[0002] Fruits are known as the best natural health food because they are rich in bioactive components such as various vitamins, minerals, organic acids, and amino acids.

[0003] However, recently, as awareness has grown that the sugar contained in fruits can cause adult diseases such as obesity, even the general public is increasingly reluctant to consume fruit.

[0004] In addition, fruits vary greatly in quality, such as taste and sweetness, from individual to individual and have poor shelf life, so they are often processed into and distributed as juice, jam, sauce, or tea. It has been pointed out that these processed foods destroy the bioactive components contained in the fruit during processing and that added artificial sweeteners have harmful effects on the human body.

[0005] Accordingly, research is actively underway on fruit processing methods that can fully deliver the bioactive components contained in fruits to consumers while remaining free from issues regarding the induction of lifestyle diseases; however, no satisfactory results have been reported to date.
