Abstract
This utility model relates to the meat industry, specifically to a technology for producing chopped semi-finished poultry products, and can be used in the manufacture of cutlets, meatballs, and other molded products. The technical result of the utility model is the production of a meat product enriched with dietary fiber, with high functional and technological properties due to the use of a plant-based ingredient that helps increase water-holding capacity, improve organoleptic properties (juiciness of the product), increase the yield of the finished product, and expand the range of chopped semi-finished products. This technical result is achieved in that chopped semi-finished poultry products containing raw meat, water or ice, vegetable oil, salt, onions, and spices are distinguished by the fact that they additionally contain hydrated apple powder, introduced into the recipe in the following ratio of components, wt.%: Poultry meat - 80 Apple powder (hydrated) - 10 Drinking water / ice - 5 Refined vegetable oil - 3 Edible table salt - 1.2 Onions - 0.5 Ground black pepper - 0.3 The use of the utility model allows to expand the range of meat products, to obtain products enriched with dietary fiber, characterized by increased nutritional and biological value, improved juiciness and stable technological parameters. The use of apple powder helps to increase the water-retaining capacity of minced meat, reduce heat loss and increase the yield of the finished product.
